if I upload something and a couple week's later I add some more stuff if I hit publish will that overwrite the original even though it's already published? (and if the name is slightly different.)

You can update your project, simply save and then publish the update, you can modify or add a description ...

once you have all that, you can change the project name (with "rename project") ... made a test before if you are not sure.

*I just did a test on "MM + Custom Character TEST" I renamed in "MM + CCA TEST" it work !
if you want to unpublish a project, use "Project\ unpublish"
