Here's another demonstration I made using the same mechanic. I changed the controls a bit, though. Left mouse uses the left weapon, right mouse uses the right weapon.
Press 1 to switch to dual wield
Press 2 to switch back to Sword/Shield setup.
If someone can figure out how to use this in an actual game setup, I'd love to see it.
